Ingredients
1pintcherry tomatoescut in half
3tablespoonsheavy whipping cream
1/2poundfresh mozzarella cheesesliced
6fresh basil leavesplus more for garnish
1garlic cloveminced
1tablespoonbalsamic vinegar
Instructions
Scoop out and discard pulp of cherry tomatoes. (I recommend using a small melon baller.)
Invert tomatoes onto paper towels to drain while you make the filling.
In a food processor, combine the cream, mozzarella cheese, basil and garlic; cover and process until blended
Cut a small hole in the corner of a pastry or gallon ziploc bag. Transfer cheese mixture to the bag.
Turn tomato halves over, and drizzle with balsamic vinegar.
Pipe cheese mixture into tomatoes. Garnish with more chopped basil if desired.
Refrigerate until serve.
Notes
One pint of cherry tomatoes typically has 25 to 30 tomatoes, for 50 to 60 tomato bites.
