Cut each avocado in half and remove the pit. Then use a large spoon to remove the flesh from the peel. Slice each avocado half into 1/2-inch wedges. You should get about 20 wedges total.
Set up a dredge station using 3 shallow bowls. Put flour in the first bowl, beat the eggs in the second bowl, and put the bread crumbs in the third bowl.
Bread the avocado wedges first in the flour so they are coated. Then dip into the eggs, and finally press into the bread crumbs until thoroughly breaded.
Arrange the avocados onto a wire rack placed over a baking sheet. Spray the tops of the wedges with olive oil spray or butter-flavored cooking spray and then sprinkle with some salt.
Bake for about 20 minutes, or until golden brown. Remove from the oven and serve warm with your favorite dipping sauce.
