These Mint Chocolate Rice Krispie Treats are delicious with the chocolate in the marshmallow and the mint flavored frosting. They are perfect for spring or St. Patrick's Day!
line a 13" x 9":pan with foil leaving the edges to hang over
grease foil
place a large pot over med heat and melt butter and marshmallows
once melted remove from heat and add chocolate, stir until melted
poor into foil lined pan and press down into a flat even layer
allow to cool completely before frosting
Mint Frosting
while the rice krispies cool cream butter and sugar together
run at low speed then slowly increase as the sugar is incorporated into the butter, once it pulls down from sides and forms balls turn to high and beat until is lightens in color and becomes light and fluffy
add water, mint extract and food coloring
spread over top of rice krispie treats once they have cooled completely
pull foil to remove the block of treats and cut into serving size (they are rich so make small)
store in the refrigerator and remove 30 min before serving to bring back up to room temp.
