Add the cans of Rotel to a blender along with the cilantro, onion, garlic, salt, pepper, cumin, and honey.
Cover and blend until liquid.
Pour into a dip bowl for serving or transfer to an airtight container and store in the fridge until you're ready to serve.
Notes
If you're worried about the spice level of this salsa, blend everything together without the jalapeno and then check the heat level. There is some heat in the Rotel from the green chiles. If you want the salsa to be spicier, add the jalapeno without seeds and blend again until it's incorporated.
If you want a hot salsa, add 1/2 to 1 whole jalapeno with the seeds. You can also add cayenne pepper to increase the heat level.
