Bacon and Rotel Cups are an easy appetizer perfect for popping! You'll be hooked on these tasty little bites! The best part? You can prep 'em ahead of time!
Preheat oven to 350 degrees F. Place phyllo shells on a baking sheet lined with a silicone mat or parchment paper.
In a large bowl, mix together the Rotel, bacon, and mayonnaise until blended.
Add in the cheese and stir until completely mixed together.
Fill the phyllo shells with the bacon/rotel mixture.
Bake for 30 to 35 minutes. Remove from the oven and serve warm or at room temperature.
Notes
The original recipe said to bake for 15-20 minutes, so you can start checking them then. If found 30-35 works great for me and gets them nice and crispy!
