Remove most of the core of the apple, leaving the bottom intact so that it acts as a cup to hold the filling.
In a small bowl, combine the cinnamon and sugar.
Add 1/2 tablespoon of butter into the apple hole. Add 1 teaspoon of cinnamon sugar mixture over the butter.
Place apples in a baking dish with high sides. Pour the apple juice into the bottom of the dish. Cover with foil.
Cook for 45 minutes until the apples are tender.
Remove from the oven. Use a spoon to carefully lift the apples by the bottom so the sauce inside doesn't spill out. Spoon pan sauce over the apples. Serve warm as is or top with vanilla ice cream and pan sauce.
