Slow Cooker Poached Salmon is great for any busy weeknight dinner. It is also an easy way to make a healthy protein ahead of time for salads or quick snack.

1cupdry white wine
1large clove garlicthinly sliced
1small handful fresh dill
1small handful fresh parsley
1poundwild salmon filletskin on
In large slow cooker, combine wine, water, shallot, garlic, dill, parsley, and peppercorns. Cut lemon in half, squeeze juice into slow cooker. Slice remaining lemon and add to the slow cooker.
Set temperature to high and heat poaching liquid for 30 minutes.
Reduce heat to low.
Rub a thin layer of salt over salmon. Place salmon fillet in crock pot, skin side down. Cook on low for about an hour, checking on it after about 45 minutes to see if the flesh starts to flake away. Keep warm in slow cooker until ready to serve.
