Pearl Couscous Salad
PEARL COUSCOUS SALAD
tastes out of this world good. I had it on a flight and had to make it at home for a delicious lunch. I usually make a big batch to have through out the week!

Ingredients

cups
chicken broth
2
cups
pearl couscous
sometimes called Israeli couscous
1
tsp
salt
1
red bell pepper
chopped
1
orange bell pepper
chopped
½
cup
purple onion
diced small
½
cup
feta cheese
crumbled
½
cup
Quick & Easy Italian Dressing
4
cups
leafy greens
Instructions
in a medium saucepan bring chicken stock to a boil
add in the pearl couscous and season with salt
bring back up to a boil and cover
allow to cook for 10 minutes or until the couscous has absorbed all the stock
remove from the heat
pour into a large bowl and add in the red and orange bell peppers, purple onion, feta cheese and Italian dressing
toss until all combined
place a cup of leafy greens on each plate
spoon out the couscous mixture over top of the salad and serve.
