Preheat your oven to 350 degrees F. Spray a muffin tin with non-stick cooking spray. Set aside.
In a large mixing bowl, whisk together the eggs, milk, salt, and pepper. Stir in cheese and bacon.
Divide the egg mixture evenly between the prepared muffin tin cups.
Bake for 25 minutes or until muffins are set in the middle.
Remove from the oven and serve warm.
Notes
To save time, you can use real bacon bits from the grocery store if you prefer.
Freeze for later: Cool the egg muffing to room temperature. Once cooled, individually wrap them in plastic wrap and then in foil. Store in a freeze-safe food storage bag in the freezer for up to 2 months. Thaw in the fridge overnight.
