Ingredients
1
sheet of puff pastry
thawed
2 - 6
ounce
filet mignon seasoned with salt and pepper
1
Tbsp
butter
¼
of an onion
thinly sliced
4
ounces
mushrooms
sliced
½
tsp
salt
pepper
1
egg
lightly beaten
Instructions
melt butter in a skillet over medium heat
once melted, add onion and mushrooms
season with salt and pepper, reduce heat to low, and cook until the mushrooms and onion are soft, and the liquid from the mushrooms has evaporated
remove from skillet, and set aside
turn up the heat to medium - high
place seasoned filet in the skillet and sear 2 minutes per side
cut puff pastry into 2 pieces
divide the mushrooms, and place in the center of each square of pastry
place filet on top of mushrooms, and fold pastry to fully enclose steak
brush with egg wash to seal seams
place steaks seam side down on a baking sheet, brush the tops with the egg
chill steaks for 30 minutes
heat oven to 425 degrees
place baking sheet in the oven, and immediately reduce the temperature to 400 degrees
bake 20 minutes - for med-rare, bake another 5 minutes if you prefer them more well done
allow to rest 5 minutes before serving
