Instructions
Slice the potatoes into large bite sized chunks and add them to a large bowl. Add in the roasted red peppers, green onions, and celery. Add salt and pepper to taste. Mix together the mayo, vinegar, sugar, mustard and paprika. Add to the potatoes. Fold in about 3/4 of the prosciutto. Cover and chill until ready to serve. Top with the remaining prosciutto and parsley.
