Ingredients

lbs.
Russet potatoes
peeled and chopped into 1 inch pieces
1
cup
chopped onion
3
stalks celery
chopped
8
eggs
hard boiled, chopped
2
cups
mayo
¾
cup
pickle juice
1
tsp
salt
or to taste
1
tsp
pepper
or to taste
1
tsp
garlic powder
1
tsp
onion powder
parsley
chopped (optional)
Instructions
place potatoes into large pot and cover with cold water
place over medium high heat and bring to a boil
cook until fork tender, then drain
place back into the pot and allow to cool
in a big serving bowl whisk together mayo, pickle juice, salt, pepper, garlic powder, and onion powder
add potatoes, chopped onion, celery, eggs, and parsley if using into the serving bowl and gently toss to cover with mayo
cover and refrigerate until ready to serve!
