Place 1 tablespoon olive oil in a large skillet and add ground pork. Season with salt and pepper and cook pork until almost done, about 7 minutes. Remove the pork and set it aside in a bowl.
Add more olive oil (if needed) and onions. Saute until onions are translucent, about 5 minutes. Add carrots, garlic, ginger, and broth to the skillet. Cook for 3 minutes.
Add pork back into the pan along with the cabbage, apple cider vinegar, sesame oil, and red pepper flakes (if using). Stir everything together.
Put a lid on the skillet and cook until the cabbage is wilted and tender, about 10 minutes.
Taste cabbage and adjust seasoning with salt and pepper as needed.
Serve warm with green onions and toasted sesame seeds on top.
Notes
Toast sesame seeds by adding them to a small skillet over medium heat. Cook for 3-5 minutes, stirring often, until lightly browned and nutty. Transfer to a bowl and let cool.
