Creamed Spinach

Ingredients

oz
fresh spinach
2
Tbs
butter
2
tsp
garlic
minced
2
Tbs
flour
1
cup
half and half
½
cup
shredded parmesan
¼
tsp
nutmeg
½
tsp
salt

tsp
pepper
Instructions
Fill a large stockpot with water and a pinch of salt and bring to a boil.
Once boiling, add spinach and stir until it starts to wilt about 1 minute.
Drain into a colander over the sink, and immediately spray with cold water to stop the cooking process.
Once cool, with your hands ring out the spinach to get as much water out as possible and set aside.
In a saute pan on stove melt your butter and then add garlic and cook for 1 minute.
Stir in your flour and cook for another minute then whisk in your half and half until thickened.
Once the mixture becomes thick, add in your parmesan, nutmeg, salt, and pepper until combined and melted.
Finally, stir in your spinach until coated.
