Ingredients

  • 16 oz fresh spinach
  • 2 Tbs butter
  • 2 tsp garlic minced
  • 2 Tbs flour
  • 1 cup half and half
  • 1/2 cup shredded parmesan
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper

Instructions

  • Fill a large stockpot with water and a pinch of salt and bring to a boil.
  • Once boiling, add spinach and stir until it starts to wilt about 1 minute.
  • Drain into a colander over the sink, and immediately spray with cold water to stop the cooking process.
  • Once cool, with your hands ring out the spinach to get as much water out as possible and set aside.
  • In a saute pan on stove melt your butter and then add garlic and cook for 1 minute.
  • Stir in your flour and cook for another minute then whisk in your half and half until thickened.
  • Once the mixture becomes thick, add in your parmesan, nutmeg, salt, and pepper until combined and melted.
  • Finally, stir in your spinach until coated.
