Ingredients
Vanilla Cake

unsalted butter
melted

white sugar
1 ¼

all-purpose flour

tablespoon
baking powder

salt

vanilla extract

egg

buttermilk
Peach Layer
4
cups
sliced peaches
¾
cup
white sugar
1
teaspoon
cinnamon
2
tablespoons
cornstarch
1
tablespoon
lemon juice
or water
1
tablespoon
white sugar
Instructions
Heat the oven to 350F degrees.
Vanilla Cake Layer
Pour the butter into the bottom of a 9x13 inch baking pan.
In a medium bowl whisk together the sugar, flour, baking powder, & salt.
Stir in the vanilla extract, egg & buttermilk.
Spoon/ pour the batter into the pan. Try to avoid too much butter pooling around the edges.
Peach Layer
In a large bowl toss together the sliced peaches, 3/4 cup sugar, cinnamon, cornstarch & lemon juice.
Spoon the peaches on top of the cake layer. Do not mix.
Bake the cobbler for 35-45 minutes, or until the top is golden brown.
Remove from the oven, and optionally sprinkle the top with 1 more tablespoon of white sugar.
Serve with vanilla ice cream.
