Black Beans

These beans are great as a side to your favorite Mexican dish or on a burrito. Try them with the Super Easy Slow Cooker Chicken Tacos by Real Housemoms.

Ingredients

  • 2 T. Olive Oil
  • 1 Yellow onion chopped
  • 2 cloves of garlic chopped
  • 1 jalapeno seeded and chopped
  • 2-15 oz cans of black beans drained and rinsed
  • 4 c. Chicken stock
  • 1 t. onion powder
  • 1 t. salt
  • 1/2 t. pepper

Instructions

  • heat oil in a pot
  • add onion and jalapeno and saute for 2-3 min.
  • add chopped garlic and allow to cook for 30 sec. to 1 min
  • add beans, chicken stock, onion powder, salt and pepper
  • bring to a boil then reduce heat to a simmer
  • periodically mash with a potato smasher
  • cook until liquid is reduced, and beans are thickened but not dry
  • Enjoy!
