Place the pork chops in the bottom of a 9-inch x 13-inch baking dish.
Pour the Coke over the pork chops. (You want the soda to almost cover the pork.) Spread the sliced shallots all over the pork chops.
Sprinkle the gravy mix and soup packets over the pork chops.
Bake uncovered for 25 minutes, or until the pork reaches an internal temperature of 145 degrees F.
Remove from the oven and sprinkle chopped parsley and crispy onions over top. Serve warm with some of the pan sauce spooned over top.
Notes
If you can't find beef gravy mix at the store, you can use brown gravy mix instead. I can usually find the Pioneer brand beef gravy at Fry's and Walmart.
Any cola will work for this recipe. You can also swap in Dr. Pepper, ginger ale, and Sprite if you like.
