Cilantro Lime Tacos

Cilantro Lime Tacos are super yummy, healthy, and easy and quick to make for a perfect family dinner!

Ingredients

  • 1 tablespoon olive oil
  • 1 pound tilapia fillets
  • 1/2 cup grated parmesan cheese
  • 2 packets Swanson® Flavor Boost™ Concentrated Seafood Broth
  • 2 tablespoons lime juice
  • 1 tablespoon chopped fresh cilantro leaves I used a little more
  • 8 flour tortillas 6-inch or taco shells, warmed
  • toppings: shredded lettuce or cabbage shredded cheese, avocado, diced red onions, sour cream, salsa

Instructions

  • Coat each tilapia fillet with parmesan cheese
  • Heat the oil in a 12-inch skillet over medium-high heat
  • Add the fish and cook for 8 minutes or until it flakes easily when tested with a fork, turning over once halfway through the cooking time
  • Add the concentrated broth, lime juice and cilantro to the skillet
  • Break the fish into large pieces with a spoon, stirring to coat with the broth mixture
  • Divide the fish mixture among the tortillas
  • Top with the lettuce, cheese, avocado, onion, sour cream and salsa
