Place about 2-inches of oil in a deep-sided skillet or saucepan and place over medium heat.
Crumble the sausage patties in a medium bowl. Then use your hands to form the crumbles into 18 small sausage balls.
Place the sausage balls in a large skillet over medium heat and cook for about 15 minutes, turning often. Remove to a paper towel-lined plate to drain.
In a medium bowl, mix together the Bisquick, sugar, and cinnamon. Whisk in the vanilla, egg, and milk until smooth.
Pick up each cooked sausage ball with a toothpick and dip it into the batter so the sausage ball is completely covered.
Carefully lower the coated sausage balls into the hot oil and fry for about 1- 1 ½ minutes or until golden brown. Remove from the oil and drain on a paper towel-lined plate. Repeat with remaining sausage and batter.
Maple Dipping Sauce
Pour the maple syrup into a small bowl and add the butter. Microwave for 45 seconds. Remove and stir until the butter has melted into the syrup.
Pour in the heavy whipping cream and stir until combined.
Serve the pancake sausage bites warm with the maple sauce poured over the top or in a bowl for dipping.
Notes
Nutrition does not include dipping sauce.
If you do not have pre-cooked sausage patties available, you can take raw breakfast sausage patties or sausage from a chub and form them into small balls. Cook as directed on the package until the sausage balls are cooked through.
