Shrimp & Pesto Jalapeno Bites

Shrimp & Pesto Jalapeno Bites are an amazing appetizer with a combination of awesome flavors. They are easy to make and will be a crowd pleaser! You can double the recipe for a larger crowd!

  • 6 jalapeños
  • 12 medium sized shrimp cooked and tail off, chopped finely
  • 2 tablespoons basil pesto
  • 2 tablespoons reduced fat mayonnaise
  • 1 garlic glove minced
  • shredded cheese any type (I used cheddar, but will try a 4 cheese mexican blend next time)
  • salt and pepper to taste


  • Preheat oven to 425 degrees
  • Wash jalapeño peppers and pat dry
  • Cut Jalapeños in half and take out all the seeds
  • (if you are doing them on the grill, brush bottom of jalapeños with olive oil or any cooking oil)
  • Add chopped shrimp, pesto, mayonnaise, minced garlic, and salt and pepper to a bowl and mix until well combined
  • Stuff jalapenos with the shrimp mixture
  • Sprinkle cheese on top of each jalapeno
  • Spray a broiler pan with non stick cooking spray
  • Bake for 5-10 minutes, or until the cheese is melted
  • (If you are cooking them on the grill, place the jalapenos on the grill for 3-4 minutes on medium-high heat)
