Shrimp & Pesto Jalapeno Bites are an amazing appetizer with a combination of awesome flavors. They are easy to make and will be a crowd pleaser! You can double the recipe for a larger crowd!

Ingredients
6jalapeños
12medium sized shrimpcooked and tail off, chopped finely
2tablespoonsbasil pesto
2tablespoonsreduced fat mayonnaise
1garlic gloveminced
shredded cheeseany type (I used cheddar, but will try a 4 cheese mexican blend next time)
salt and pepperto taste
Instructions
Preheat oven to 425 degrees
Wash jalapeño peppers and pat dry
Cut Jalapeños in half and take out all the seeds
(if you are doing them on the grill, brush bottom of jalapeños with olive oil or any cooking oil)
Add chopped shrimp, pesto, mayonnaise, minced garlic, and salt and pepper to a bowl and mix until well combined
Stuff jalapenos with the shrimp mixture
Sprinkle cheese on top of each jalapeno
Spray a broiler pan with non stick cooking spray
Bake for 5-10 minutes, or until the cheese is melted
(If you are cooking them on the grill, place the jalapenos on the grill for 3-4 minutes on medium-high heat)
