Skinny "Cream" of Mushroom Soup

This "cream" of mushroom soup is made with Greek yogurt to make it low in calorie and the white wine and herbs make it delicious!!!

  • 2 T olive oil
  • 1 onion chopped
  • 4 cloves of garlic chopped
  • 8 oz. baby bella mushrooms sliced
  • 8 oz. baby bella mushrooms chopped
  • 1 t salt
  • 1 t pepper
  • 2 t dried sage
  • 1 t chopped rosemary
  • 3 T flour
  • 1 c white wine like chardonnay
  • 1 c Greek yogurt
  • 3 c chicken stock
  • more salt and pepper to taste


  • heat olive oil in a large pot over med heat
  • add chopped onion and cook until softened, 2-3 min
  • add garlic and cook additional 1-2 min, stirring so is doesn't burn
  • add all mushrooms and sautee
  • stir in salt, pepper, sage and rosemary
  • allow to cook for 2-3 min
  • in a small bowl whisk together flour and wine until all lumps are gone
  • stir into pot and allow to cook for 3-4 min
  • in a med bowl whisk together 1 c chicken stock with Greek yogurt
  • stir Greek yogurt mixture and remaining chicken stock into the pot
  • bring to a boil and then reduce to a simmer
  • allow to simmer at least 30 minutes, stirring occasionally
  • serve and enjoy
