Ingredients

  • 2 cups chicken broth
  • 1 cup uncooked quinoa
  • 1 tbsp olive oil
  • 1 onion sliced
  • 3 garlic cloves chopped
  • 2 zucchini sliced
  • 1 yellow squash sliced
  • 8 cups fresh baby spinach
  • 10 oz can diced tomatoes with chilies
  • 2 cups of {Busy Weeknight} Chicken cooked and thinly sliced

Instructions

  • bring chicken broth to a boil
  • add the quinoa to the broth and bring back up to a boil cover and allow to cook for 12 minutes
  • remove from heat and fluff with a fork then recover and allow to sit for 15 minutes
  • heat olive oil in a large skillet over medium heat
  • add sliced onions and cook for 203 minutes
  • add in the garlic, zucchini, yellow squash and tomato with chilies and stir
  • season with salt and pepper to taste
  • add in the baby spinach and cover
  • cook until the spinach wilts
  • place quinoa in a bowl or plate and top veggies then the chicken slices
  • enjoy!
