Ingredients
2
cups
chicken broth
1
cup
uncooked quinoa
1
tbsp
olive oil
1
onion
sliced
3
garlic cloves
chopped
2
zucchini
sliced
1
yellow squash
sliced
8
cups
fresh baby spinach
10
oz
can diced tomatoes with chilies
2
cups

cooked and thinly sliced
Instructions
bring chicken broth to a boil
add the quinoa to the broth and bring back up to a boil cover and allow to cook for 12 minutes
remove from heat and fluff with a fork then recover and allow to sit for 15 minutes
heat olive oil in a large skillet over medium heat
add sliced onions and cook for 203 minutes
add in the garlic, zucchini, yellow squash and tomato with chilies and stir
season with salt and pepper to taste
add in the baby spinach and cover
cook until the spinach wilts
place quinoa in a bowl or plate and top veggies then the chicken slices
enjoy!
