Apple Cider Cupcakes with Apple Cider Cream Cheese Frosting

Apple Cider Cupcakes

  • 2 1/2 cups all-purpose flour
  • 2 tsp baking powder
  • 1 tsp salt
  • 1 tsp cinnamon
  • 1 tsp ginger
  • 1/2 tsp nutmeg
  • 1/4 tsp allspice
  • 1/2 cup butter room temperature
  • 2 cups sugar
  • 2 tsp vanilla extract
  • 2 eggs room temperature
  • 3/4 cup buttermilk at room temperature
  • 3 cups shredded apples (I used Figi and the big wholes on the grater)

Apple Cider Cream Cheese Frosting

  • 8 oz. cream cheese room temperature
  • 1/2 cup butter room temperature
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/8 tsp allspice half of a 1/4 tsp
  • 4 cups of powdered sugar
  • 2 tbsp of apple cider


  • preheat the oven to 350 degrees F and line a muffin pan with cupcake liners
  • in a medium bowl whisk together flour, baking powder, salt, cinnamon, ginger and allspice then set aside
  • in the bowl of a stand mixer beat the butter until it becomes light and fluffy
  • add in the sugar and vanilla extract and continue to beat for another 2 minutes
  • add in the eggs one at a time and mix until completely incorporated
  • pour in the buttermilk and mix (batter will look lumpy but don't worry)
  • turn off the mixer and dump in the flour mixture
  • slowly turn the mixer back on and allow it to work until ingredients are just combined
  • remove from stand mixer and fold in the shredded apple
  • fill the cupcake liners 3/4 of the way full
  • place in the oven to bake for 20-25 minutes or until a toothpick can be inserted into the center and removed clean
  • remove from oven and allow to cool

Apple Cider Cream Cheese Frosting

  • using a stand mixer or electric mixer beat the cream cheese until it's light and fluffy
  • add in the butter and continue to beat until fluffy
  • slowly add the powdered sugar, cinnamon, nutmeg, and allspice
  • add in the apple cider
  • Frost the cupcakes with the frosting and enjoy!!!
