Butternut Squash French Toast

  • 1/4 cup Butternut Squash Puree
  • 4 large eggs
  • 1/4 teaspoon ground cinnamon
  • pinch of salt
  • Vegetable oil
  • 8 slices of your favorite bread. I used Challah


  • In a bowl large enough to dip the bread, whisk together 1/4 cup Butternut Squash Puree, 4 eggs, 1/4 teaspoon cinnamon, and a pinch of salt until smooth.
  • Heat a large skillet over medium heat and lightly oil the skillet.
  • Dip the bread into the egg mixture one piece at a time, being sure to coat each side. Place the coated bread into the skillet and cook until golden brown on each side. About 3-4 minutes per side. Continue cooking the coated bread slices in this manner until all are cooked through.
  • Serve with pure maple syrup and enjoy!
