Pumpkin Oatmeal Cookies with Cream Cheese Icing

Ingredients
Pumpkin Oatmeal Cookies

cups
all purpose flour
1
tsp
baking soda
1
tbsp
ground cinnamon
1
tsp
ginger
1
tsp
nutmeg
¼
tsp
allspice
1
tsp
salt
1 ½
cup
rolled oats
1
cup
butter
melted
¼
cup
molasses
¾
cup
brown sugar
½
cup
granulated sugar
1
egg
¾
cup
pumpkin puree
2
tsp
vanilla extract
Cream Cheese Frosting
2
tbsp
cream cheese
softened
1
cup
of confectioners sugar
2
tsp
milk
Instructions
preheat oven to 350 degrees F
in a large bowl whisk together the flour, baking soda, cinnamon, ginger, nutmeg, allspice and salt
stir in the oats and set aside
add the melted butter into the bowl of a stand mixer
add in the molasses, brown sugar and granulated sugar
next add in the egg
once fully incorporated add in the pumpkin puree and vanilla and beat until fulling combined
slowly add in the dry ingredients and mix until just combined
line a baking sheet with parchment paper
drop 3 tbsp sized balls of cookie dough onto the baking sheet spread out
bake for 10 to 13 minutes
allow cookies to cool completely (if you can)
Cream Cheese Icing
mix together (sort of mash) the cream cheese and confectioners sugar
slowly whisk in the milk and continue to whisk until no lumps
dip cooled cookie tops into the icing and allow to harden on the counter
enjoy!
