Ingredients

  • 4 cooked baking potatoes quartered or cubed, drained
  • 1/2 pound bacon cooked and chopped (optional)
  • 3/4 cup shredded sharp Cheddar cheese
  • 1/4 to 1/2 cup milk
  • 1 cup sour cream
  • 2 tablespoons unsalted butter melted
  • Salt and pepper to taste
  • 3/4 cup shredded sharp Cheddar cheese
  • 1/4 cup chopped green onions

Instructions

  • Preheat oven to 350 degrees F. Spray four mini casserole dishes with cooking spray.
  • In a large bowl, with a potato masher mash the potatoes (I leave the skins on but remove skins first if you don't want them.) Mix 3/4 cup Cheddar cheese, sour cream, milk, butter, green onions, salt, black pepper with potatoes. Spoon potato mixture into four prepared mini casserole dishes; Divide 3/4 cup Cheddar cheese and crumbled bacon by four and sprinkle over the top of each of the mini casseroles.
  • Bake in the preheated oven until just bubbling, 10 to 15 minutes. Cool for at least 5 minutes before serving.
