Cheesy Zucchini Gratin
Cheesy Zucchini Gratin is full of fresh zucchini and sweet onions nestled in a rich cheesy sauce then topped with a buttery cracker topping. It's the perfect side dish for just about anything!
Servings 6 servings
- 1/4 cup unsalted butter
- 1 cup chopped sweet onion
- 1 clove garlic minced
- 4 medium zucchini diced
- 2 tsp. kosher salt
- 1/2 tsp. fresh ground black pepper
- 1/4 tsp. fresh ground nutmeg
- 2 tbs heaping TBS all purpose flour
- 3/4 cup milk warmed in microwave
- 1 cup crushed buttery crackers such as Ritz®
- 3/4 cup shredded sharp cheddar cheese divided
- 2 TBS unsalted butter melted
Heat oven to 400 degrees F.
Spray an 8" x 8" glass baking dish with non-stick cooking spray, Set aside.
In large non-stick skillet, melt 1/4 cup unsalted butter. Add onion and cook over medium heat for about 6 minutes, until softened and translucent.
Add in garlic and saute with onion for about another minute.
Add in the zucchini. Sprinkle with salt, pepper, nutmeg and flour. Mix and cook for one minute.
Add in warm milk and stir until mixture begins to thicken. (1-2 minutes)
Take pan off heat and add in 1/2 cup cheddar cheese.
Pour mixture into prepared baking dish. Top with remaining cheese then crushed crackers. Drizzle with melted butter.
Bake in oven for 18-20 minutes, or until topping is browned and zucchini is tender.
Remove from oven and allow to cool at least 15 minutes before serving. (This will help the sauce thicken)
