Cheesy Zucchini Gratin

Cheesy Zucchini Gratin is full of fresh zucchini and sweet onions nestled in a rich cheesy sauce then topped with a buttery cracker topping. It's the perfect side dish for just about anything!

Ingredients

  • 1/4 cup unsalted butter
  • 1 cup chopped sweet onion
  • 1 clove garlic minced
  • 4 medium zucchini diced
  • 2 tsp. kosher salt
  • 1/2 tsp. fresh ground black pepper
  • 1/4 tsp. fresh ground nutmeg
  • 2 tbs heaping TBS all purpose flour
  • 3/4 cup milk warmed in microwave
  • 1 cup crushed buttery crackers such as RitzĀ®
  • 3/4 cup shredded sharp cheddar cheese divided
  • 2 TBS unsalted butter melted

Instructions

  • Heat oven to 400 degrees F.
  • Spray an 8" x 8" glass baking dish with non-stick cooking spray, Set aside.
  • In large non-stick skillet, melt 1/4 cup unsalted butter. Add onion and cook over medium heat for about 6 minutes, until softened and translucent.
  • Add in garlic and saute with onion for about another minute.
  • Add in the zucchini. Sprinkle with salt, pepper, nutmeg and flour. Mix and cook for one minute.
  • Add in warm milk and stir until mixture begins to thicken. (1-2 minutes)
  • Take pan off heat and add in 1/2 cup cheddar cheese.
  • Pour mixture into prepared baking dish. Top with remaining cheese then crushed crackers. Drizzle with melted butter.
  • Bake in oven for 18-20 minutes, or until topping is browned and zucchini is tender.
  • Remove from oven and allow to cool at least 15 minutes before serving. (This will help the sauce thicken)
