Preheat oven to 350F. Poke holes in all of your potatoes with a fork and place on a nonstick baking sheet. Bake potatoes for 40-60 minutes, until fork tender. Remove from oven and allow to cool completely (you can put them in the fridge to speed up the process)
Once potatoes are cooled, cut into bitesized cubes. Place in a bowl and set aside.
Mix together sour cream, greek yogurt, salt and pepper, chives, cheese, and bacon.
Toss potatoes in sour cream, topping with more bacon, cheese, and chives if desired (you should!)
