Smokey Corn Dip

This easy corn dip packs a little heat and a whole lot of flavor!

Ingredients

  • 1 14 oz can corn drained
  • 2 tablespoons poblano pepper chopped
  • 2 tablespoons tomato chopped
  • 2 tablespoon cilantro chopped
  • cup mayo
  • 2 tablespoons Greek yogurt
  • ½ cup cheddar Jack cheese
  • ¾ teaspoon cumin
  • ½ teaspoon chipotole chile powder
  • ½ teaspoon salt
  • splash lime juice

Instructions

  • Combine all the ingredients in a bowl; adjusting seasoning as necessary. Cover and refrigerate until ready to serve. Garnish with more cilantro if desired.
