Apricot Ginger Quinoa
Fluffy quiona makes an amazing and healthy side dish. Adding apricots and ginger really kicks this side dish up a notch.
- 1 cup quinoa
- 1/2 cup dried apricots roughly chopped
- 1/2 tsp fresh grated ginger
- salt to taste
In a medium saucepan, with a lid, bring 2 cups of water to a boil over high heat. Add quinoa, cover and let simmer over medium heat for 12 minutes. Remove from heat, add chopped apricots and ginger, and fluff lightly with a fork. Return lid and let stand 15 minutes.
Season to taste and serve warm.
