Grilled Veggie Kabobs

  • 1/4 cup olive oil
  • 2 garlic cloves minced
  • 1 teaspoon dried oreagno
  • 1 teaspoon dried basil
  • 1/2 teaspoon dried thyme
  • 1 tablespoon lemon juice
  • 1 medium zucchini diced
  • 1 medium squash diced
  • 1 cup cherry tomatoes
  • 8 ounces cremini mushrooms
  • 1 cup red onion diced
  • 1 green bell pepper diced
  • salt and pepper


  • Prepare your wooden kabob skewers by soaking in water for 30 minutes. Set aside.
  • Whisk togeher olive oil, garlic, oregano, basil, thyme, and lemon juice in a small bowl. Set aside.
  • Skewer your veggies onto the kabob skewers, then baste the seasonings on all sides using a pastry baster. Season with salt and pepper.
  • Prepare your grill according to the manufacturer instructions. Place the kabobs onto the grill when there is no flame, grill on each side for 5 minutes.
