In a saucepan, heat olive oil over low heat. Add carrots, celery, and greens. Saute for 5 minutes or until vegetables are tender.
Add cooked vegetables and marinara sauce to a blender. Blend until smooth.
Spread pizza dough into a rectangle on a lightly floured surface. Add veggie sauce onto the dough and spread out evenly. Sprinkle generously with cheese.
Roll up dough, starting at the long end, until 1 large roll is formed. Pinch seam closed to seal. Slice dough log into 8 pieces.
Lay pizza roll ups on a greased baking sheet. Sprinkle the top of each roll up with a little more mozzarella cheese. Bake for 15 minutes.
Remove from oven and serve warm or at room temperature. I like to have some extra marinara on hand for dipping.
