Spread a tablespoon of cranberry sauce on each slice of bread. On two pieces of bread layer with cheese, apple slices and another slice of cheese. Top with remaining slices of bread, making two sandwiches.
Melt butter in a skillet over medium-low heat. Carefully place sandwiches down in skillet, gently press with the back of a spatula. Flip after a few minutes and cook for an additional 3 minutes, add more butter if needed. Cook until cheese is melted and bread is toasted.
