Ingredients

fresh spinach

thinly sliced fresh mushrooms

c.
thinly sliced red onion

pieces
bacon
1
medium red potato
thinly sliced and quartered

hard boiled eggs
peeled and thinly sliced
For dressing:
1 ½
Tbsp.
flour
1
tsp.
salt

Tbsp.
maple syrup
¼
c.
cider vinegar

c.
milk
Instructions
Cook bacon and potatoes in a medium skillet until bacon is crisp. Reserve bacon grease.
Prepare salad by layering spinach, mushrooms, onion, eggs, crumbled bacon, and potatoes in a large bowl.
Prepare dressing by adding flour and salt to bacon grease in skillet. Stir; then add remaining ingredients and cook over medium heat until thickened.
Drizzle generously over salad.
