Preheat oven to 375 degrees F. Line a baking sheet with parchment paper or a silicone baking mat, or coat with non-stick cooking spray.
Place 3/4 cup chocolate chips in a small saucepan. Place on the stove over the lowest possible heat. Once chips begin to melt, remove them from the stove and stir. Return to heat for a few seconds at a time stirring until smooth. Set aside.
In a small bowl, combine flour, baking soda, and salt. Set aside.
In a large mixing bowl, beat butter, sugar, and brown sugar together until fluffy, about 2 minutes.
Add eggs, one at a time, beating well after each addition. Add vanilla and mix to combine.
Add melted chocolate and mix until incorporated. Add flour mixture and mix until just combined.
Stir in the remaining 3/4 cup chocolate chips by hand. Drop cookie dough by rounded tablespoons on the prepared baking sheet.
Bake for 8 minutes, or until sides are set and the middle is still slightly soft.
Remove cookies from oven and let rest on cookie sheet for 2 minutes. Then transfer to a wire rack to cool completely.
