Cheesy Bacon & Jalapeno Hash Brown Casserole is a spicy and rich side dish! It pairs perfectly with comfort food like a ham dinner, pork chops or pot roast!
In a saute pan over medium-high heat, cook the bacon for 6-8 minutes until crispy. Remove the bacon from the pan. Once cool enough to handle, chopped bacon into 1/2-inch pieces.
Using the bacon grease in the pan saute the onions and jalapenos for 3-4 minutes until the onions are translucent.
Set aside 1/2 cup of cheddar cheese and half of the cooked bacon.
In a large bowl, mix together the hash browns, sour cream, cream of chicken soup, butter, salt, pepper, onions, jalapeno, 1 1/2 cups cheese, and half of the bacon.
Coat the inside of a 9-inch x 13-inch pan with non-stick cooking spray and fill with hash brown mixture.
Bake at 350 degrees F for one hour. Top with remaining cheese and bacon and bake an additional 15 minutes. Serve immediately.
