Sun Dried Tomato Pesto

Sun dried tomato pesto makes a delicious appetizer, but can be used on pasta and pizza too.

Ingredients

  • 3/4 cup dry pack sun dried tomatoes
  • 3/4 cup hot water
  • 1/2 cup fresh basil leaves
  • 3 cloves garlic
  • 1/4 cup toasted pine nuts
  • 1/2 cup shredded parmesan cheese
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1/4 tsp sugar
  • 4 tbl olive oil
  • 3 tbl cold water

Instructions

  • Soak sun dried tomatoes in hot water for 4-5 minutes.
  • Drain water off tomatoes.
  • Add all ingredients to a food processor.
  • Blend until all ingredients are combined and chopped.
  • Will be a bit chunky.
  • Add more water TBL at a time until you get a texture you like.
  • Spread on toasted baguettes, pasta, or pizza dough.
