Paleo Beef Stroganoff Crock Pot Recipe
This Slow Cooker Paleo Beef Stroganoff is such a great meal for any person on the Paleo diet! Serve it over riced cauliflower or zoodles and it makes for a delicious and easy meal!

Ingredients

lbs
lean stew beef
½
large white onion
chopped

cloves
garlic
minced

sliced mushrooms

beef broth

cup
coconut aminos
¼
cup
red wine vinegar

onion powder

tsp.
garlic powder

cup
canned coconut milk {I use full-fat}

arrowroot powder

Instructions
Place beef, onions, mushrooms, and garlic in slow cooker.
In a small bowl, mix together the beef broth, coconut aminos, red wine vinegar, onion powder, and garlic powder. Pour on top of beef and vegetables.
Cover and cook on low for 5 hours.
After the time is up, add the coconut milk.
In a separate, small bowl, mix together the arrowroot powder and water. Add it to slow cooker.
Let simmer for another 30 minutes or until sauce is thickened and beef is tender.
Serve over cauliflower rice.
