White Bean Hummus

This simple hummus recipe is made with white beans and fresh basil for a light, summer dip.

Ingredients

  • 15 ounce can Cannellini or Northern White Beans rinsed and drained
  • 1 c Fresh Basil
  • 1-2 oz Pine Nuts
  • 1-2 cloves Garlic
  • Juice of 1 Lemon
  • 1.2 tsp Salt more to taste
  • 1/2 c Olive Oil

Instructions

  • Place first 4 ingredients in a food processor and begin to puree slowly pouring in olive oil as you go.
  • Once you have reached the consistency of a smooth, slightly thick dip add the lemon juice and puree the mixture together.
  • Add salt to taste.
  • Serve with vegetables, pita bread, or crackers.
