Crock Pot Chili with Chicken

An easy dinner to throw together on a cold day.

Ingredients

  • 4 chicken breasts
  • 2 medium carrots - diced
  • 2 celery stalks - diced
  • 1/4 white onion - diced
  • 15 oz can black beans
  • 15 oz can diced tomatoes
  • 15 oz can dark kidney beans
  • 15 oz can pinto beans
  • 15 oz can white beans
  • 1 package mild chili seasoning mix

Instructions

  • Place chicken in the crock pot.
  • Cover with carrots, celery, and onion.
  • Add cans of beans and tomatoes DO NOT DRAIN
  • Add chili seasoning and mix together.
  • Cook on High for 4 hours or low for 6-8 (until chicken is cooked)
  • Remove chicken and shred or chop.
  • Put chicken back into crockpot to serve.
