These quick and easy buffalo mushroom bites are healthier than chicken wings, baked with a crispy outside and tender middle, then stuffed with blue cheese dressing and crumbles.
Preheat oven to 425 degrees and grease a baking dish or line a baking sheet with a silicone mat. Place butter in one bowl, eggs and water in another bowl, breadcrumbs in a third bowl, and flour in a fourth bowl.
Dip mushrooms in the melted butter, then roll in flour. Dip flour-coated mushrooms in the egg mixture to coat, then roll in the breadcrumbs and place in a single layer on prepared baking sheet.
Bake for 10-12 minutes until crispy and golden on the outside.
Remove from oven, use a fork to dip mushrooms in buffalo sauce, then return to pan. Cook 4-5 minutes longer.
Fill mushrooms with blue cheese dressing, top with blue cheese crumbles and parsley, and serve.
