Ingredients

  • 2 TBS vegetable oil
  • 1 large sweet onion thinly sliced
  • 1/2 tsp. kosher salt
  • 1/2 tsp. granulated sugar
  • 1 loaf of French bread sliced diagonally and lightly toasted
  • 2/3 cup apricot preserves
  • 4 oz. goat cheese crumbled
  • fresh thyme optional

Instructions

  • Preheat oven to 350 degrees F
  • Heat oil in large skillet over medium heat and add onion, salt and sugar. Cook 20 minutes, stirring frequently, until onions are caramelized.
  • Arrange bread slices on baking sheet. Evenly top with apricot preserves,caramelized onions, and goat cheese.
  • Bake 5 minutes or until goat cheese is just melted. Garnish, if desired, with fresh thyme sprigs.
