- 2 TBS vegetable oil
- 1 large sweet onion thinly sliced
- 1/2 tsp. kosher salt
- 1/2 tsp. granulated sugar
- 1 loaf of French bread sliced diagonally and lightly toasted
- 2/3 cup apricot preserves
- 4 oz. goat cheese crumbled
- fresh thyme optional
Preheat oven to 350 degrees F
Heat oil in large skillet over medium heat and add onion, salt and sugar. Cook 20 minutes, stirring frequently, until onions are caramelized.
Arrange bread slices on baking sheet. Evenly top with apricot preserves,caramelized onions, and goat cheese.
Bake 5 minutes or until goat cheese is just melted. Garnish, if desired, with fresh thyme sprigs.
