Preheat your oven to 350 degrees F. Line a baking sheet with parchment paper (or a silicone baking mat) and set aside..
Combine all of the ingredients in the bowl of a stand mixer fitted with the paddle attachment. Mix on medium speed until well combined, scraping down the sides of the bowl as needed.
Using a medium cookie scoop, portion the cookie dough and place the scoop on the prepared baking sheet about 2 inches apart.
Bake for 10 to 12 minutes or until the tops of the cookies just begin to crack.
Remove from oven and allow to cool on the pan for 2 minutes before transferring to a wire cooling rack to cool completely.
Notes
If you prefer, you can use a large mixing bowl with a hand mixer to make the cookie dough.
You can use yellow cake mix if you can't find spice cake mix. Just be sure to stir 1 teaspoon of pumpkin pie spice into the cake mix before proceeding.
Don't use pumpkin pie filling. It's already spiced. You'll get an overload of baking spice flavors that'll ruin the cookies.
