In a large mixing bowl, toss the potatoes, bell peppers, and red onion. Add the avocado oil, garlic, salt, and Italian seasoning and toss to evenly coat the vegetables.
Place a single layer of the potato mixture on the bottom of the air fryer basket. (You may need to cook in multiple batches depending on the size of your air fryer.) Cook for 15 to 20 minutes or until the potatoes are fork-tender and golden brown. I like to shake the basket about halfway through the cooking time.
Once the potatoes are cooked, transfer them to a serving bowl, season with pepper to taste, and top with sliced green onions. Serve warm topped with a sunny-side-up egg if you like.
