I can’t believe we’ve made it to spring already, and Easter at that!! We’ve been getting more and more sunshine here and I can’t wait till summer!!! My office is done enough to move my desk and computer in and I have been VERY happy in there. I have so many windows and a view of the big fir behind my house. I watch the squirrels run through the trees all the time. I’m so happy and feeling so motivated having my new work space. So! We know that you’re busy today with friends and family for Easter. Garlic Roasted Shrimp with Spinach Artichoke Pasta is a favorite for so many reasons! You can make it and get it on the table in 15 minutes and it tastes AMAZING!!! It’s easy enough for just a family meal during the week but it could even be served to guests if you’re having company or for a special occasion.
MEAL #2 Grilled Honey Lime Chicken
My kids generally prefer my Busy Weeknight Chicken over all others but when I first made Grilled Honey Lime Chicken for them last year they were so happy and said that it was their new favorite! That made ME happy. It’s so frustrating being a food blogger with kids who only want to eat one kind of chicken for dinner.
MEAL #3 Ravioli Gorgonzola
We have to have pasta at least once a week in our house. We can’t get enough. If it were up to my husband and kids it would be spaghetti every week but I have to change it up. That’s where Ravioli Gorgonzola comes into play! It’s so great and again, easy to make. See a pattern here?
MEAL #4 Salsa Verde Turkey Burger
As the weather starts to warm up, I start wanting to grill outside. I love sitting outside and sipping on a drink on the deck out back and relaxing with my husband while we cook. Salsa Verde Turkey Burger is one of our favorites because the taste is amazing but also because it’s a turkey burger and in the spring I’m generally trying to shed some of my winter weight! 🙂
MEAL #5 Slow Cooker Crispy Carnitas
We love Mexican food! We have a restaurant nearby that we go to probably about once a week. It’s fantastic! They have great food and it’s family owned. We really can’t get enough though so I have to make more deliciousness at home. As much as I love to eat Mexican food it really has to be super easy. These Slow Cooker Crispy Carnitas are so easy to make and all you do is crisp them up slightly in the oven just before serving!
MEAL #6 Roasted Miso Chicken
As you can tell we love chicken in my house. I usually always have it in the fridge or freezer so I like to have a lot of chicken recipes that I can call on to spice up the menu. All of a sudden my kids started to LOVE sushi and while we’re there they always get miso soup. Now that I know they love miso it’s like finding an open window I can sneak more and more foods into! Yay!!! So we’ve started with two things they love chicken and miso and we’re serving Roasted Miso Chicken.
MEAL #7 Grilled BBQ Pork Roast
Pork roasts are another big favorite in my house. We started out telling my kids when they were little, and not the best eaters, we’d tell them it was chicken. Every fall we’d have the Perfectly Moist Pork Loin with baked apples but in the summer we LOVE Grilled BBQ Pork Roast. Seriously, just look at that moist roast!!!
