Today we’re kicking off our 12 days of sweets here on Real Housemoms! We are so excited to bring you all some of the yummy desserts we’re making for our this year. To start we got in on a HUGE cookie swap. We linked up with The Great Food Blogger Cookie Swap. It was so much fun!!! Over 500 food bloggers participated and we were matched with 3 other bloggers and mailed each a dozen cookies. Then, we got a dozen cookies from three different bloggers. It was so much fun getting the mail for a few days!!!
These Pistachio Cranberry Oatmeal cookies are super yummy. I first combined the pistachios and craisins because I liked the Christmas colors, red and green but once i tasted them I was so happy. They are crazy yummy!!! To dress them up I dip the bottom in white chocolate. These are good without it but they are insane with it. I usually make some with and without the chocolate when I make them. Try them this year and let us know what you think. Are you doing any cookie exchanges this year?
Ingredients
- 1 cup unsalted butter softened
- 1 ¼ cups brown sugar lightly packed
- ¾ cup granulated sugar
- 2 teaspoons vanilla extract
- 2 large eggs
- 1 ½ cups all-purpose flour
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- 1-2 cups pistachios shelled and chopped
- 1-2 cups craisins
- 3 cups old fashioned oats
- 12 ounces white chocolate chips melted
Instructions
- Preheat your oven to 350 degrees F.
- Beat the butter, sugar, brown sugar, and vanilla in a large mixing bowl until fluffy and smooth.
- Add the eggs one at a time, mixing after each addition.
- Combine the flour, baking powder, salt, and cinnamon in a medium mixing bowl. Add the dry ingredients to the wet ingredients in two additions, mix until just combined after each addition.
- Use a wooden spoon or rubber spatula to stir in oats, pistachios, and craisins.
- Portion the cookie dough into 2 tablespoon balls and place 2 inches apart on a greased or silicone mat-lined baking sheet.
- Bake for 12-14 minutes or until the cookies are golden and set. Remove from the oven and transfer to a wire rack to cool. Repeat with the remaining cookie dough.
- Once the cookies are cooled, spread some melted white chocolate on the bottom of each cookie and set them on the wire racks upside down to let the chocolate set up.
