{2-Ingredient} Strawberry Lemon Cupcakes
With just two ingredients, these strawberry lemon cupcakes are quick and easy to make. The homemade cream cheese frosting adds the perfect touch of sweet.

  • 1 Box lemon flavored cake mix
  • 1 12-oz can strawberry soda
  • 4-oz softened unsalted butter
  • 6-oz softened cream cheese
  • 2 C powdered sugar
  • 1 tsp vanilla extract
  1. Preheat oven {325 degrees for dark or non-stick pan / 375 degrees for shiny metal pan}
  2. Line two regular muffin tins with cupcake liners
  3. Combine cake mix and soda until blended well and no longer frothy
  4. Fill each cup 1/2 full
  5. Bake for 12-17 minutes
  6. Cool completely before frosting
  1. Cream butter and cream cheese
  2. Continue to mix, adding sugar one cup at a time; mix in vanilla
  3. Store in fridge until ready to use
Garnish with fresh strawberry slices if desired
