Cilantro Lime Tacos

Now that the Super Bowl and a day of eating appetizers is over, I want to eat a healthy dinner! I still feel so full from all of the delicious food yesterday.  Thank goodness I have bootcamp today!

When I was buying Chicken Stock at the store one day, I came across Swanson’s® Flavor Boost™ Concentrated Seafood Broth on the same shelf, and thought it was worth a try. It absolutely was.  I was planning on making fish tacos that night anyways and in a way very similar to the recipe on the box.  I figured adding the seafood broth could only enhance the already yummy cilantro and lime flavors I was going to use. So I gave it a try and Cilantro Lime Tacos were super yummy, as well as healthy, and easy to make.  I made these two weeks in a row since my family loves them so much. My kids really enjoy this meal and it is a great way to get a weekly fish recipe on the menu.  I try to make at least one fish or seafood dinner a week and this one is perfect for a quick and simple, yet healthy and tasty meal!

Cilantro Lime Tacos
Cilantro Lime Tacos are super yummy, healthy, and easy and quick to make for a perfect family dinner!
Recipe type: Entree
  • 1 tablespoon olive oil
  • 1 pound tilapia fillets
  • ½ cup grated parmesan cheese
  • 2 packets Swanson® Flavor Boost™ Concentrated Seafood Broth
  • 2 tablespoons lime juice
  • 1 tablespoon chopped fresh cilantro leaves (I used a little more)
  • 8 flour tortillas (6-inch) or taco shells, warmed
  • toppings: shredded lettuce or cabbage, shredded cheese, avocado, diced red onions, sour cream, salsa
  1. Coat each tilapia fillet with parmesan cheese
  2. Heat the oil in a 12-inch skillet over medium-high heat
  3. Add the fish and cook for 8 minutes or until it flakes easily when tested with a fork, turning over once halfway through the cooking time
  4. Add the concentrated broth, lime juice and cilantro to the skillet
  5. Break the fish into large pieces with a spoon, stirring to coat with the broth mixture
  6. Divide the fish mixture among the tortillas
  7. Top with the lettuce, cheese, avocado, onion, sour cream and salsa


Jalapeno Bites

Super Bowl is right around the corner and we all need some super delicious appetizers to snack on, right?  It is great to be able to pick up something quickly and get back to the game so we don’t miss any of the action.  I really wanted the Falcons to make it to the big game, but it will still be fun to watch, while enjoying time with friends and eating yummy food.

Aubrey and I had a girl’s night in a couple of weeks ago with some appetizers and champagne.  We both made a couple of amazing appetizers and played games for a few hours.  One of the appetizers I made was Jalapeno Bites and they were excellent.  Cream cheese and jalapenos as the main ingredients automatically makes for something incredible!  Throw in parmesan cheese and panko breadcrumbs and you get an appetizer that is definitely one you will want again…and again!  My husband tried them later and LOVED them!  I highly recommend making Jalapeno Bites for Super Bowl, or for any party or get together.  They will be a big hit and your man will be very happy!  Jalapeno Bites are also really easy to make and I am looking forward to making them again this weekend for the game!  I was so glad I found this amazing recipe on Pinterest, at Dishing with Leslie.  While we were in California over Christmas break, I had some strange stomach bug for a couple of days and was stuck in bed.  (Thank you to my mom and dad for taking care of the kids). While lying in bed, I got sucked into Pinterest and was looking up some new ideas and recipes.  We get together with friends and family a lot, so appetizers are always a staple at my house. Thank goodness I found Jalapeno Bites because they were awesome!

Jalapeno Bites
Jalapeno Bites are an amazing appetizer with a perfect combination of cream cheese, jalapenos, and parmesan cheese. They are perfect for Superbowl or any party!
Recipe type: Appetizer
  • 1 8 oz block cream cheese, softened
  • 8 oz shredded parmesan cheese (about 2 cups)
  • 4 seeded and chopped jalapenos
  • 1 large egg, beaten
  • ½ tsp salt
  • 2 cups panko breadcrumbs
  1. Preheat oven to 350 degrees
  2. Mix your cream cheese, parmesan cheese, jalapenos, egg, and salt to form a paste
  3. Shape the paste into bite sized balls
  4. Roll the balls in the panko
  5. Place on un-greased baking sheet and bake for 15 minutes-20, or until lightly golden brown

Cheesy Edamame

I love edamame and I love cheese, so Cheesy Edamame is the perfect snack or side dish for me!  My kids also love this healthy vegetable and we eat it often with dinner, as well as in salads. Whenever we get sushi, my kids get a bento box that includes edamame.  My daughter is a vegetable eating machine and sometimes she only wants green vegetables for dinner.  Edamame is one of her favorite foods!  Cheesy Edamame, which I found at, is super easy to make and would be a great snack or side dish.  As I am trying to make some better choices with eating, I much rather have this than chips or something I will quickly regret.  I know we are all busy and get caught up in our daily routines, so it is nice to have something quick, easy, and healthy to eat.  I also love that Cheesy Edamame is full of protein, fiber, and vitamins!

Cheesy Edamame
Cheesy Edamame is a perfect snack or side dish that is healthy and full of protein and fiber!
Recipe type: side dish or snack
  • 14 oz package frozen shelled edamame
  • 1 tbsp olive oil
  • ¼ cup grated parmesan cheese
  • salt and pepper
  1. Preheat the oven to 400 degrees
  2. Place the edamame into a colander and rinse under cold water to thaw
  3. Drain and dry the edamame
  4. Spread the edamame beans into the bottom of a 9x13 inch baking dish
  5. Drizzle with olive oil
  6. Sprinkle cheese over the top and season with salt and pepper
  7. Bake in the preheated oven until the cheese is crispy and golden, about 15-20 minutes.

Parmesan Chicken Tenders & Onion Dip

I made Parmesan Chicken Tenders and Onion Dip several times when we lived in Pennsylvania and I recently  came across the recipe in my email.  I remembered how much my family loved this meal and since I hadn’t made it in awhile, we had them last week.  My daughter and I really love the tenders in the onion dip, while my husband and son enjoy them with ketchup, so you have options on how to eat the chicken tenders. This delicious meal is easy to make and is kid friendly.  I have always made it for dinner, but Parmesan Chicken Tenders and Onion Dip would make a yummy appetizer as well.  I don’t know of any children (or adults) who don’t like chicken nuggets, so give them a try and let us know what you think!

Parmesan Chicken Tenders & Onion Dip
Parmesan Chicken Tenders in Onion Dip is simple to make and is a delicious family dinner or yummy appetizer!
Recipe type: Appetizer or Entree
  • 1½ lbs chicken tenders (I used 3 big chicken breasts and sliced them thin and into tenders)
  • 1 cup flour
  • 1 teaspoon kosher salt
  • ½ teaspoon fresh ground black pepper
  • 2 large eggs
  • 1 cup Italian seasoned breadcrumbs
  • ¾ cup grated parmesan cheese
  • butter
  • extra virgin olive oil
  • 2 large onions
  • 2 tablespoons butter
  • 3 tablespoons extra virgin olive oil
  • ¼ teaspoon ground cayenne pepper
  • 2 beef bouillon cubes
  • fresh ground black pepper
  • 4 ounces cream cheese, at room temperature
  • ½ cup sour cream
  • ½ cup mayonnaise
  1. Combine the flour, salt, and pepper in a shallow bowl
  2. Beat the eggs with 1 tablespoon of water in another shallow bowl
  3. Combine the breadcrumbs and Parmesan in another shallow bowl
  4. Dredge the chicken tenders on both sides in the flour mixture, then dip both sides into the egg mixture and roll in the bread-crumb mixture, pressing lightly to coat
  5. Heat 1 tablespoon of butter and 1 tablespoon of olive oil in a large sauté pan and cook the chicken tenders on medium-low heat for about 3 minutes on each side, until just cooked through (don't crowd the pan)
  6. Add more butter and oil and cook the rest of the chicken tenders
  7. You can keep the chicken tenders warm for about 15 minutes on a baking sheet in a preheated 200 degree oven
  8. Serve with Onion Dip.
  9. Onion Dip directions:.
  10. Cut the onions in half and then slice them into ⅛-inch thick half-rounds (you will have about 3 cups of onions)
  11. Heat the butter and oil in a large sauté pan over medium heat
  12. Add the onions, cayenne, beef bouillon cubes, and pepper
  13. Sauté for 10 minutes (smash the bouillon cubes and mix the granules with the onions)
  14. Reduce the heat to medium-low and cook, stirring occasionally, for 20 more minutes until the onions are browned and caramelized
  15. Allow the onions to cool
  16. Place the cream cheese, sour cream and mayonnaise in the bowl of an electric mixer and beat until smooth
  17. Add the onions and mix well
  18. Serve at room temperature as a dip with the Parmesan Chicken Tenders

Spinach Artichoke Dip (in a Crock Pot)

This Spinach Artichoke Dip is amazing!  I have tried many variations from quite a few restaurants, and at different parties, but this one is my absolute favorite!  I got the recipe from my friend Kelley and have made it numerous times over the years.  Thank you Kell for sharing such an amazing recipe!  It is always a crowd pleaser and it always disappears very quickly.  One night we had a few families over for appetizers and dinner and the three wives pretty much polished off the entire bowl before dinner.  It is that delicious! Not only is Spinach Artichoke Dip an incredibly addictive and savory appetizer, but it is really simple to make in the crock pot.

Spinach Artichoke Dip
Spinach Artichoke Dip is an incredibly tasty appetizer and super easy to make in the crock pot!
Recipe type: appetizer
  • 1 14.75 oz jar of artichoke hearts
  • 8 oz cream cheese
  • 1 cup grated parmesan cheese
  • 8 oz sour cream
  • 10 oz package chopped frozen spinach
  • 4 cloves garlic, minced
  • salt and pepper to taste
  1. Defrost the spinach in the microwave (about 5 minutes)
  2. Mix all of the other ingredients in the crock pot
  3. Add hot spinach to crock pot
  4. Stir well
  5. Cook on high for 1½-2 hours, or until it warm throughout
  6. Stir and serve
