When I think of summer time desserts I always think of apple pie.  I think because we kick off summer with Memorial Day (a patriotic holiday), then celebrate the Fourth of July (obviously patriotic) and then finish summer up with Labor Day (a celebration of the American worker).  I mean, how are you getting going to get more American than Apple pie?  I absolutely love apple pie with a big, giant scoop of vanilla ice cream.   I love my Mom’s apple pie but I’ll share that with you all later, this is my ice cream version of her pie and it’s so good! Apple Pie is perfect for celebrating Fourth of July!  I mean can you get more American than Apple Pie?   These Apple Pie Bites with Caramel Dipping Sauce are so good!  I had friends over for dinner and cards and we shared these goodies.  Shared is a nice word for fighting to eat more than the next person, and get as many as we could before they were gone, politely.    At one point my friend TJ grabbed the last one and asked her husband if he wanted it.  Like a good husband he said, “No, you can have it.  I’ve been trained that’s the right answer.”   We had a lot of fun and ate a lot of pie. One of the best summer desserts is angel food cake!  We always eat a few of them in the summer.  In the past I always bought them from the store but a few weeks back I finally  made this Best Angel Food Cake at home and realized it’s not hard at all!!!   I will usually serve the cake with fresh whipped cream and fresh summer berries like blackberries, blueberries, strawberries and raspberries!  It makes for a nice light dessert but a few weeks back I was having friends over and wanted to make a pretty dessert that was full of summer goodness and this Berries and Cream Angel Food Cake Trifle was perfect! My husband loves pie.  For his birthday for years he’s been requesting pies in place of a birthday cake.  One of his summertime favorites is Key Lime Pie.  It was too tart for me as a kid but as I’ve grown and my taste buds have too, I come to love this sweet and tart dessert too.  I wanted a new way to make the fun pie.  I have trouble with portion control when it comes to food that I love so making little mini versions is usually best for me.  I made these when we were having friends over for dinner and cards.  After dinner we brought out the cards and set a plate on the table to snack on these Key Lime Pie Cookie Cups while we played.  BIG MISTAKE!!!!  We couldn’t stop popping them into our mouths!  We had 3 to 4 each!  It was worth it though!
