I have been on a Rice Krispie treat kick lately.  My youngest had some and told me that he wanted to have his friends over from school so they could try the yummy chocolate rice krispies that his mommy made.  Awe!  He really knows how to melt my heart!  :)  I love the way that you can easily change rice krispie treats and make them your own.  I’ve even covered them in fondant and put them on a cake to decorate.  They are so yummy and versatile that there isn’t anything not to love!  I decided to make these mint chocolate to help celebrate St. Patty’s Day but really who needs an excuse for mint and chocolate, right?  You can easily add more chocolate to this recipe, I was running out but you do still taste the chocolate with this version.  Play around and give them a taste.  Let us know what you think!

These Mint Chocolate Rice Krispie Treats are delicious with the chocolate in the marshmallow and the mint flavored frosting. They are perfect for spring or St. Patrick's Day!
Recipe type: Dessert
Serves: 20
Chocolate Rice Krispie Treats
  • 10 oz. Mini Marshmallows
  • ½ c butter
  • 1 c. chocolate chips
  • 6½ c Rice Krispies
Mint Frosting
  • ¾ c. butter, room temp.
  • 3 c powdered sugar
  • 1½ T water
  • ½ t mint extract
  • 6 drops of green food coloring
Chocolate Rice Krispie Treats
  1. line a 13" x 9":pan with foil leaving the edges to hang over
  2. grease foil
  3. place a large pot over med heat and melt butter and marshmallows
  4. once melted remove from heat and add chocolate, stir until melted
  5. poor into foil lined pan and press down into a flat even layer
  6. allow to cool completely before frosting
Mint Frosting
  1. while the rice krispies cool cream butter and sugar together
  2. run at low speed then slowly increase as the sugar is incorporated into the butter, once it pulls down from sides and forms balls turn to high and beat until is lightens in color and becomes light and fluffy
  3. add water, mint extract and food coloring
  4. spread over top of rice krispie treats once they have cooled completely
  5. pull foil to remove the block of treats and cut into serving size (they are rich so make small)
  6. store in the refrigerator and remove 30 min before serving to bring back up to room temp.
